Microwave Chocolate cake

I have been experimenting this summer with microwave cakes as it is too hot to turn the oven on, but I need the cake!!lol
This recipe is taken from a very old microwave cookbook designed for 625 watts. Take note that if you have a new microwave you will have to adjust the powerlevel. ie my microwave is 900 watts so I cook stuff at level 7 when the recipes in this book say "full power".

Chocolate beauty cake
1 1/2 cups of unsifted all purpose flour.(GF MIX- B Hagman)
1 cup packed brown sugar
1/4 cup cocao
1 tsp baking soda
1/2 tsp salt
1/2 cup water
in a mixing bowl stir above dry ingred together then add the water and stir 100 strokes until it is a stiff shiny batter.
Then add
1/2 cup water
1/3 cup cooking oil
1tbsp vinegar
1/2 tsp gf vanilla
stir all together until smooth and well blended.
Put in a 6 cup fluted microwave bundt pan or in a greased 8inch round dish.
Microwave at 650 watts for 8-10 min. Let cool on a solid countertop or wooden board( completes the cooking!)
I iced mine with A drizzle orange flavored icing this morning for hubbies birthday.
I prefer the bundt pan as it is a bit fancier.

I do a microwave GF chocloate cake - 100g gf flour, 100g margarine, 100g sugar, 25g cocoa, 1 tsp gf baking powder and a splash of milk.
Beat sugar and butter like normal cake, beat in eggs and fold in dry ingredients. I then put it in a plastic container, cover with cling film and pierce, then microwave for about 4 mins.
Its much gooier than normal choc cake and very moist. I have made my own chocolate sauce in the past using syrup, cocoa and sugar all put in the microwave (still experimenting with amounts but makes yummy ice cream topping) - again great accompaniment to the cake…

I have a similar recipe based on:
6oz soft margarine
6oz caster sugar
6oz GF SR flour
1 level tablespoon cocoa
2 tablespoons warm water
1½ teaspoons GF baking powder
3 eggs
Mix all ingredients together until smooth.
The original recipe was from a cookery book of recipes for one or two people and suggested using part of this mixture to make individual puddings in a microwave.
You could adjust the amounts to suit.
Put a little marmalade or apricot jam into small teacups or bowls. Half fill the chocolate mixture and cover with cling film. Cook on full power. 1-1½ minutes for one pudding, 2-3 minutes for two puddings. Allow to stand for one minute before turning out.
I would suggest Ambrosia chocolate custard to serve with these. It comes in little individual pots, is clearly marked as gluten free and can be microwaved in the container
