Chocolate sponge cake

6oz Juvela Mix 6oz Caster Sugar 6oz Margarine 3 Medium sized eggs 1 generous tablespoon of cocoa powder
I generally cream sugar and margarine together and then add beaten eggs gradually. Finally I fold in the Juvela Mix and the cocoa powder. I suppose it might work just as well with an electric mixer but I have always mixed it by hand.
If you are making a sandwich cake the mixture needs to be divided between two shallow 7" round baking tins. I have some non-stick ones but I always cut a circle of baking parchment to line the base of each of the tins. I also lightly grease the sides of the tins.
A sandwich cake needs 25 minutes on 180 degrees If you use the mixture for buns it makes about 18 and they take 15-20 minutes on 180 degrees.
When the cake is cooled I usually fill it with whipping cream and scatter a few chocolate buttons in as well. I then put whipping cream on top and decorate with chocolate buttons. I think the cake would also be nice with mandarin segments inside and on top as well as the chocolate buttons.....
