Oven 160c
4oz dark bitter chocolate (gf & best quality) 4oz ground almonds 4oz caster sugar 4oz unsalted butter 4 eggs separated 2 tablespoons strong black coffee 2 talespoons rum, tia maria or kahula
Melt choc & clarify butter. In a bowl mix almonds & sugar, add choc., butter, hot coffee, the rum & egg yolks and mix all very well.
Whisk egg whites into soft peaks & fold into mixture carefully.
Pour into an 8" cake tin, greased & lined with greaseproof paper & bake for half hr or until firm.
Let cool completely before turning out & dredging with icing sugar.
