Key Lime Pie - definitely worth a try

..I've made a key lime pie using Trufree ginger nuts as the biscuit base and it was fab - try this one....
Key Lime Pie
Base: 75g butter, 250g crushed gingernut biscuits
Filling: 397g condensed milk, Finely grated zest and juice of 5 limes, 450ml double cream
Decoration:75g melted bitter chocolate (70% cocoa solids), 8 lime slices, 50g icing sugar (optional)
In a large saucepan, melt the butter and stir in the crushed biscuits. Press into the base and sides of a 23cm loose-bottomed cake tin. Place in the fridge to chill. Whisk together the remaining ingredients until thick and creamy. Spoon over the biscuit base and chill for at least 1 hour. Remove the pie from the tin and place on a serving plate. Drizzle the melted chocolate over the top and leave to set. Before serving, decorate with the lime slices.
Serving suggestion: caramelise the lime slices to achieve a glistening syrupy coating. Simmer gently in pan to which you have added some icing sugar and water, barely covering the slices. The syrup will reduce to a sticky coating, but do remove from the heat before it colours and browns.
I melted 75g of chocolate to make the first time and found it far too much, next time I just used about 6 squares of chocolate and that was more than enough. I also didn't bother with the lime slices for the top. It's really worth a try, it is totally delicious!
