Celadon's Mum's Ground Almond Cake

…my mum is coeliac, and this is the best cake recipe we've ever found, we use it for every family birthday, you can also use it for cup cakes for childrens parties - it's delicious!
6 eggs, seperated, 200g caster sugar, the golden one is good for this 200g ground almonds almond essece, if you like it
Whisk egg yolks and sugar until they have thicked and are pale in colour. Add the ground almonds, and a few drops of almond essence to this mixture. Whisk the egg whites to stiff peaks. Fold the egg whites into the mixture. Bake in a lined tin for about 45- 50mins at 180 degrees. Use a skewer to check if its cooked, it should come out clean when the cake is ready. It tastes even better if you leave it for 24 hours before eating.
