Papaya Tropicana
Bone Friendly Recipe
Serves 4
The fruit and yogurt combine well to fix bone-strengthening calcium in the body
2 Papayas 2 ripe mangoes 4 soft apricots (if tinned drain first) 5 tabs natural yogurt or creme faiche 4 tabs coconut milk 4 leaves fresh mint
Halve papayas lengthways, discarding pips. Remove flesh, keeping skin intact. Set aside skins & half flesh. Mix other half papaya flesh with that of mango & apricots, yogurt or creme fraiche and coconut milk. Place mixture in skins, alternating with slivers of mint. Serve chilled with GF biscuits.
