Banana Loaf Cake Recipe for Toria

GF board
3 medium bananas (approx. 14 oz / 400g)
10 oz / 300g Self-raising flour (I use Juvela White Mix)
5oz / 150g Soft Butter
5oz / 150g Soft Brown or Demerera Sugar
2 medium eggs
3oz / 80g Walnuts or Sultanas
2 tsps Lemon Juice
2 tbsps Olive or Vegetable Oil
Oven 180C / 350F / Gas 4
Greased and lined 2lb loaf tin
I literally throw everything into the bowl and mix with an electric whisk. Although the recipe says to use lemon juice and walnuts or sultanas I have never used these in the cake.
Pour the mixture into the greased and lined loaf tin and bake for around 45 minutes.
Delicious on it's own or with cream cheese icing
