Macaroons

Just tried this amazing recipe from Nigella's How to Be a Domestic Goddess for Spanish Macaroons. Feeling a bit sick now from overindulging...!
425g ready-ground almonds 250g icing sugar (sieved) zest of 2 oranges 1/2 teaspoon almond essence 1/2 teastoon cinnamon 1 large egg, plus 3 large egg whites
180C
Mix almonds, sugar, orange zest, almond essence and cinnamon. In a separate bowl beat together the eggs. Make a well in the dry ingredients and add the egg. It will be very sticky. I used a tablespoon.
Form walnut-sized balls by rolling pieces of dough and place them on lined baking trays. Keep washing your hands, not only does this degunk but it makes the dough much easier.
Cook for about 20 minutes (my oven needed far less) until they look slightly brown. DON'T cook them for too long - they need to be sticky and chewy in the middle, not too dry.
Makes 30ish.
I loved this recipe - not something that needs Frankenstein style GF alternative ingredients added, but naturally GF. Only took a few minutes to make them too. A real winner.
