Katies Cake Stall

I used Glutafin Gluten Free Wheat Free White mix and made Sponge Mix, I put this in Mini Muffin Cases and in a Square Baking tray, the ones in the square tray I cut up into approx 1" squares. Some I cut into fingers. Covered some in Buttercream, dipped in sugar strands, some in Choco Buttercream dipped in choco sugar strands and the fingers were covered in a Lemon Icing I made with Icing Sugar, lemon rind and the juice of 2 lemons (real clench your bum cheeks stuff, but went down a treat) I also made a Birthday cake wich I cut up and sold in pieces and a Triple Choco ponge Cake. 2 Big Chocolate Sponges (just add a couple of large tablespoons of cocoa powder to sponge mix and wee drop more milk) covered the base of one in strawberry jam, crushed 2 cadbury flakes over it, the bottom of the other I smothered in 1" thich choco buttercream, sandwiched together, covered the top in Choco Buttercream and crushed another 2 flakes over this. Sold that in slices. Could have sold these cakes whole all day. Katie helped me by dipping the cakes in the sugar strands....................lol for about 12 cakes. Peter
