....a recipe below courtesey of my other half Nigel - he's become very good at adapting receipes!!!
Steamed Pudding 3oz Butter 3oz Sugar 6oz Rice flour plus 1/2 tsp Xanthan Gum and 1/4tsp baking powder 1 egg Milk to allow for consistency
Cream together butter and sugar then beat in the egg. Add the flour a bit at a time, then add milk until the mixture comes off the spoon in an easy drop (quite runny for a cake mix!) Put Jam or Golden Syrup (or whatever you fancy in the bottom of a boiling basin - no particular amount however much you like and put the mixture on top. Place bowl into a large pan with enough water to come 1/3rd of the way up the bowl and boil for 1 1/2 hours. Remove and serve. .... ****************************************************
