Florentine Recipe

Florentines
60g butter 60g granulated sugar 2 tsp whipping cream 30g glace cherries, chopped (GF) 30g chopped mixed peel (GF) 60g almonds, finely chopped 60g almonds, flaked 115g plain chocolate (GF)
Heat the oven to 180C/350F/gas 4. Cover two large baking sheets with non-stick baking paper (or greaseproof paper).
Melt the butter and sugar in a saucepan. Stir in the cream and remove from the heat. Blend in the rest of the ingredients except the chocolate. Place teaspoonfuls of the mixture well apart on the prepared baking sheets. Bake for 10-15 munutes or until golden brown. Melt the chocolate in a basin over hot water (or use a microwave). When the biscuits are cold turn them over and spread the underside of each biscuit with a teaspoonful of chocolate. Leave to harden and store in an airtight tin
