Buckwheat pancakes

100g buckwheat flour 300 ml milk (we use semi-skimmed) 50g melted butter 1 egg pinch of salt cooking oil (we use rapeseed oil) Place flour and salt in a mixing bowl, add egg. Add milk a little at a time and beat into a batter. Mix well adding the melted butter and leave for 1 hour. Ligthly oil a heavy frying pan and heat well. Put a tablespoon of butter into the hot pan and roll around to cover the surface. Cook until the pancake is a golden brown colour.
These pancakes are delicious with golden syrup, maple syrup or chocolate spread. You can use lemon and sugar but we think that they are nicer with a sweet spread of some kind.

I made them last night too but doubled the recipe for 4 people. Cos of the butter in the batter you don't need to oil the pan at all. .....2 rounds for pudding with stewed apple, sugar and cinnamon mix, lemon juice and squeezy honey but not neccessarily all at once!!! Delicious!!!!! You can also pour on any liqueur of your choice...
