Swiss Roll

Its a Glutafin recipe:
grease and line a swiss roll tin Whisk 4 medium eggs and 75g/3oz of caster sugar unitl thick, full of bubbles and paler in colour Add 250g/9oz of Glutafin Select cake mix and 15ml/1tbsp of cold water and fold with a metal spoon being carfeul to retain as many air bubbles as possible Pour into tin making sure the base is equally covered Bake @ 190c/170c fan/375F or Gas mark 5 for 10-12 mins until firm to touch in the centre Invert sponge lengthways onto greaseproof paper covered in caster sugar. Peel off paper and trim into a neat rectangle Spread with 225g/8oz high fruit/low sugar apricot jam. Make a horizontal 2cm cut on both sides 1cm from the bottom edge and with the edge nearest you gradually roll the swiss roll away from you
