Pink Sponge
From Gill GF board
Blackberry Sponge
2 oz caster sugar 2 oz butter 4 oz self raising flour (i.e. gf flour + 0.5 teaspn baking powder + 0.25 teaspn xanthum gum) 1 egg splash of milk pinch of baking powder 2 tbsp juice from can of blackcurrants 2 oz blackcurrants from a can (I used blackberries picked from a nearby bush instead of the blackcurrants, pre-heated in microwave to get juice running.)
Method. 1. Cream the butter and sugar together in a food processor until pale and thick (I used electric whisk). Add the flour, egg, milk, baking powder till combined. 2. Carefully fold in the juice and blackcurrants to create a marble effect. 3. Grease a small pudding dish and pour in the sponge mix. Cover with cling film and microwave on high for 4 minutes. 4. Turn out onto a serving plate and serve.
My 4 year old particularly loves this, she calls it the 'pink sponge'.
