.... Bit embarrassed about posting my recipe for summer pudd as it was a make it up as I went along job! Probably won't turn out next time. Anyhow here he goes-- Line the base of 4 small ramekin dishes with a piece of crustless Lifestyle bread (I had white to use up as it was getting to the end of the loaf and not quite as fresh!) A mixture of red and blackcurrants, a few raspberries and couple of strawberries brought to a simmer with a drop of water and sugar to your own taste. Save some fruit for decoration. Simmer until just soft. Drain, (but not too much and keep the juice) and spoon over the bread. Top with another round of crustless bread. Pour over a drop of juice just to cover the bare bread. Place a small cup with a weight in it to weight the mix down a little (watch out for overflow if too much juice - voic eof experience). When cool, place in fridge and leave for a couple of hours. Turn out onto your serving plate and again use the juice to cover the bare bits of bread. Serve with cream, icecream or creme fraiche and decorate with the spare uncooked fruit. Any left over fruit could be frozen or added to plain yoghurt or I expect to make it a bit more adult you could add some favourite tipple to the fruit when simmering. Hope that is ok.
