Plain sponge cake
8oz rice flour 8oz caster sugar 8ozMarg/butter 4 large eggs (if medium I would use 5) 3 teaspoons gf baking powder 1 teaspoon xanthan gum
2 x 8"/20cm deep sandwich tins
I use an all in one method with a hand held mixer and bake for 25 - 30 minutes at 180 degrees C.
If we haven't got visitors I cut one circle in half and sandwich it. I then cut little circles out of the 2nd half with a pastry cutter to make individual sponges for the freezer so I can make up a speedy trifle for my daughter. Works well with individual pot portion tubs of Sainsbury custard.
