Chickpea lemon cake From oliviascotland This is a gluten-free recipe, suitable for coeliacs, which I made for the first time today - I got the recipe from the Diet Freedom website ... 1 x 400g can chickpeas, drained and rinsed 1 lemon 8oz sugar 3 eggs In a blender, whizz the chickpeas until they are smooth. Add the zest of the lemon and half the juice, the sugar and the eggs and mix for a few seconds until you get a smooth batter. Pour into a greased and lined loaf tin and put in the oven at 175C for 45 mins. Take out and leave to cool for 15 minutes. Then drizzle over the rest of the lemon juice. When cool, turn out, slice and enjoy. It's really delicious, and you'd never ever guess that it was made from chickpeas! www.noraskitchen.com/forum/viewtopic.php?id=218
