Sicily is part of Italy so quite easy.
McDonalds have gluten free cheeseburgers (two patties, 2 slices of cheese and a schar gf bun). There is a McDonalds at Catania airport (before security) and a large drive through McDonalds on the outskirts of Siracusa. (More in Palermo and catania I think). Check mcdonalds.it website for ingredients because some of the McFlurries that you would think would be OK aren't.
Quite a few places do GF pizza.
Quite a few places do GF icecream (gelato). Most have cups and a few have GF cones. To be honest, cups are easier in the heat anyway.
We found GF pasta and GF bread and GF cakes in Lidl and Eurospin supermarkets.
EU labelling means that gluten has to be highlighted in the ingredients list. Quite a few products state SENZA GLUTINE (gluten free).
At beaches and waterparks and other tourist sites, Magnums or Magnum style icecreams are common.
We ate at PizzaManhatten in Cassabile (near Fontaine Bianche) and Arancina Glutenfree in Siracusa (orancina are Sicilian street food - rice balls with fillings that are covered in breadcrumbs and deep fried). In this cafe ALL the Arancina is Gluten Free and the owners are very welcoming.
Italian children all have the coeliac blood test at age 7 so awareness is very good although some restaurants just say they can't do anything and others are very helpful.
