ORIGINAL 3-MINUTE GLUTEN-FREE CHOCOLATE CAKE

Recipe type: Dessert INGREDIENTS 4 tbsp gluten-free flour mix (I use my Two-Ingredient Flour Mix) 4 tbsp granulated sugar 2 tbsp cocoa powder (or raw cacao powder) 1 large egg 3 tbsp milk (dairy or non-dairy) 3 tbsp oil (your choice; I like extra virgin olive oil best)
INSTRUCTIONS In a medium-sized bowl, mix flour, sugar, and cocoa. Add egg, milk, and oil. Mix well. Microwave on high for 3 minutes. Let sit in the microwave for a few minutes more as the cake will still be rising and baking. After cooling a bit, cut cake into four serving size pieces and ease out of bowl with a rubber spatula.
NOTES Some readers have commented that they like to add a pinch of baking soda or baking powder for more lift and a pinch a sea salt for that wonderful contrast and slightly heightened chocolate flavor.
