Nicola’s Microwave Meringues
1 egg white 8oz (225g) icing sugar
Whisk egg white until stiff. Fold in icing sugar to form very stiff mix. Roll 1 teaspoonfuls into tiny balls & place in microwave bun tray (or far apart on baking parchment). Cook on full power for about 1 minute to 1 minute 30 seconds or until meringues do not flop when door opens. You will need to do them in batches using baking parchment otherwise they will all join together.
