I have just returned from goa! I can't eat gluten or dairy so it was tricky but to be honest I was more concerned about getting 'Delhi belly' and eating in a safe place!! Download an app called google translate it will really help. I was in the north for 3 days and decided to stick to the same restaurant just out of choice because it was easier and I didn't eat meat just to make sure I didn't get sick. My favourite foods were - dosa, idli and uttapam which are all made from rice flour. Very tasty and gluten free! BUT very very important tip they use something called Hing in curries - it's asafoetida powder but it contains wheat flour. I know this because I'm Indian and it's the same thing in the UK so you must ask if they use this - and they do especially in sambhar which accompanies dosa and sometimes even in masala dosa - in the potato mix. I even asked to see the bottle in one restaurant to see if it was ok but it said 'maida' which is wheat flour so you must must ask if they use this in food you eat. The local restaurants wouldn't have a clue what gluten is so you'll have to explain. If you're staying in a good hotel then speak to the head chef but always be cautious because india is still very behind so I would be wary still of what the chef says - you'll know what to trust!! If you want any help let me know. I ate at a restaurant in panjim too which is closer to south goa it was called fidalgos and I had plain dosa no sambhar with aloo jeera potatoes and that was fine!!
