This is delicious:-
2 whole lemons, (unwaxed, washed & organic) 4 large eggs, separated 4oz ground almonds 4oz caster sugar 8" cake tin - well-greased and base lined with greaseproof paper Boil lemons in a small saucepan with just enough water to cover the lemons. When soft, open up & remove pips. Liquidise lemons with the 4 egg yolks until smooth, (with the water from the saucepan). In a large bowl mix the almonds & sugar and add to this the lemons & egg mixture. Whisk egg whites to soft peaks and fold gently into lemon mixture. Pour into cake tin & bake for approx. half hr or until springy to touch. Fan oven 160c - other - moderate oven Let it cool completely before turning it out and dredge liberally with icing sugar. Will rise well but, when cold, will decrease to half size.
