Crepes Suzette

Here's a recipe for crepes suzette:-
4oz GF baking mix 2 beaten eggs 4 fl oz milk veg oil for frying
For the sauce:-
2oz butter 2oz caster sugar 5 fl oz orange juice 3 tbs orange liqueur
Place baking mix in bowl. Make well in centre, add eggs and 2 tbs milk. Beat with wooden spoon to form smooth batter, then gradually add remaining milk.
Heat little oil in small non-stick pan. Remove from heat and pour off excess oil. Pour in 2tbs batter, cook over moderate heat til top is beginning to look dry and underside is golden. Flip over and cook other side for 20-30 seconds. Make 10-12 more, interleaving them with greaseproof paper.
Melt butter in large flameproof dish, stir in sugar and juice, add crepes, coating them well in the sauce and fold into quarters. Add liqueur. Heat gently and light with taper to serve flamed.
