I use a few 6 or 7 or 8 or 9 sometimes half a packet) tablespoons of Glutafin Cake Mix one large egg and some milk to make it drop off the spoon. Good mix and cook away. Do them early enough and the kids smell them and come running down the stairs. Peter

… This is my version: I use 4ozs Tritamyl GF Flour (equivalent of self-raising), 1 tablespoon sugar, 1 medium egg, ¼ pint buttermilk. You will have gathered by now that I like to do things the easy way so I put all these ingredients in the goblet of one of those tall, wand type blenders and wizz them together to produce a thick creamy batter. I pour small amounts straight unto my electric pan allowing room for them to spread. When they start to bubble I turn then over and cook the other side until nicely browned. I set the temperature of the pan to approx 180C and, although the surface is non stick, I oil it very lightly to start with and between each batch. I find an easy way to do this is to pour a small amount of cooking oil into a saucer and I use a rolled up 'wad' of kitchen roll dipped in this to rub over the surface of the pan. Bon Appetit!
