Ciabatta bread by Eileen » Sat Mar 26, 2005 8:19 pm
Without a shadow of doubt, they turned out to be the best GF loaves I have made in my 13 years of being GF! The loaves are springy and rustic looking. I adapted the recipe, so will list as follows:-
1 and a half cups water (using cup from bread machine) 1 teasp salt 1 teasp sugar 1 tbsp olive oil 3 and a half cups Juvela High Fibre Mix 1 and a half teasp yeast
Place these ingredients in machine in the order stated. Select the Dough cycle.
When the cycle has finished, turn the mix onto a chopping board. (It is really sticky so I suggest you use a spatula - I got in a terrible mess using my hands).
Using no more than two tbsp flour, bring the mix together, handling as little as possible, then cut in half. Move sections to a non-stick baking tray, (I use long lasting baking parchment).
Leave to rise for 15 mins. Bake at 220 deg C for approx. 20 mins.
