Shortbread Cookies by Joanne » Fri Oct 26, 2012 .. I have been making these for ages, they are simple to make and very inexpensive. Its Rachel Allen's Recipe 225g Butter softened ( don't scrimp by using Marg, the butter tastes so much better) 110g Caster Sugar 275g Plain Flour ( i use Odlum's Tritamyl, its says self-raising on the bag, but i find it fine for Plain flour) Oven 170c/ Gas 3 Cream the butter & sugar together until creamy & fluffy Add in the flour gradually, until mixture forms a soft ball. Wrap in clingfilm and chill for an hour. Then either roll out and use a cookie cutter , or use walnut sized little balls of the dough flattened on a baking tray, cook for 15 mins, or until very pale golden colour.
