My home baked cakes and Christmas pudding contain no gluten containing ingredients and I have strict procedures in place to prevent cross contamination in my 5 star hygiene rated kitchen in the Lincolnshire Wolds. I use lots of fresh vegetables and fruit alongside rapeseed oil to cut the saturated fat content.
