Gram Flour Madeira cake

I have made the following madeira cake a few times - a good solid cake - often have a piece with custard for pudding!
Ingredients:- 175g Butter 150g caster sugar grated rind & juice of a lemon pinch ground cinnamon 3 medium eggs 4 drops vanilla essence 90g sifted gram flour 90g rice flour 1 hpd tsp GF/WF baking powder 100g glace cherries (optional)
Method: Cream butter & sugar until fluffy. Add lemon rind & cinnamon. Beat in eggs,one at a time,adding some flour with each. Toss in cherries (if used)in the remaining flours then fold flours into mixture along with vanilla essence and lemon juice. If mixture look a bit thick add some milk (which i normally do)
Spoon mixture into a greased lined 18cm/7" cake tin and bake for 40-50 mins (or until a skewer come out clean from cake) at 160C/325F/Gas mark 3. Turn out onto wire rack to cool.
