J’s Mummy’s Ginger cookies

GF board
Ginger cookies
350g GF plain flour 1-2 teaspoon ground ginger 1 teaspoon bicarbonate of soda 100g butter (or margarine or DF spread ) 175g soft light brown sugar 1 egg 4 tablespoons golden syrup
Mix flour, bicarb, ginger, rub in butter, add sugar (I have used white when I've ran out of brown sugar) add egg and syrup, stir and then knead to make a ball. Roll out, cut, cook @ 180 for about 10 mins
Decorate if required - eat (esp nice with a glass of cold milk !)

Dove's Farm Gingerbread
Metric Ingredients Imperial 200g gluten free flour 8oz 50g sugar 2oz 1tsp mixed spice 1tsp 1tsp bicarbonate of soda 1tsp 2tsp ground ginger 2tsp 100g butter 4oz 100g black treacle 4oz 50g golden syrup 2oz 150ml milk ¼pt 1 beaten egg 1
Method 1. Mix together the flour, sugar, mixed spice, soda and ginger. 2. Gently melt together the butter, treacle, & syrup, then add to the dry ingredients. 3. Warm milk and beat into the mixture followed by the beaten egg. 4. Pour into a greased and lined 150mm x 200mm (6" x 8") baking tray. 5. Bake in an oven preheated to 150ºC/300ºC/Gas Mk. 2 for 60 minutes. 6. Cool gingerbread in tin before cutting.
