Trevor's Cheese Scones
Ingredients
100g (4oz) butter or Pure 200g (8oz) Juvela Gluten-Free mix/fibre or white mix 1tsp GF baking powder 300g mature cheddar cheese (grated) 2 medium egg (beaten with sufficient milk to make 125ml (5fl oz) liquid) salt and freshly ground black pepper
Instructions
Oven temperature: 180C
You will need: a baking tray, lightly greased
Place the Mix, baking powder, and salt and pepper in a bowl and rub in the butter or Pure until the mixture resembles breadcrumbs. Stir in .. most of the cheese, and gradually add the liquid to form a soft but not sticky dough. Knead lightly until smooth and then roll out to 2.5cm (1inch) thickness on a surface lightly dusted with Mix. Cut out using a scone cutter, re-knead trimmings and repeat. Place on a baking tray, brush with remaining milk mixture and sprinkle with remaining cheese. Bake in a preheated oven for 10-12 minutes until golden brown
