The recipe we use for Victoria Sponge is in "Great Gluten-Free Baking" by Louise Blair.
Use Rice Flour, caster sugar, GF baking powder etc. Last time he did it my husband used half butter and half soft margarine.
We have a fan oven, put both tins on the same shelf so they cook evenly.
That recipe book has bookmarks in place for scones, lemon drizzle loaf, orange and polenta crispy cookies and the Victoria Sponge, it's probably the most used of our GF cookery books.
