Recipe:
Plain sponge.....any plain sponge will do
I got Green's Veggie jelly mix (in Asda I think). I added 200ml of Orange juice and heated the juice in with the jelly mix. I added about two teaspoons of orange essence to give it more depth. You have to bring the mix to the boil stirring continually and then let it cool a bit before use.
Spread a think layer of apricot jam on the sponge to seal it. Then pour the thickened slightly cooled jelly mix on to the sponge. Place in the fridge for it to set.
Then I melted chocolate (I use a trade chocolate called Barry Callebaut (which is dairy free too), but any good chocolate will do. Allow the choc to cool a bit before spreading over the set jelly so it's not as runny.
I then chilled it in the fridge. With hindsight I would have added butter to the chocolate as it was difficult to cut coming out of the fridge and the butter would have made it more pliable.
I think I also would add orange zest to the sponge itself to add that little bit extra if I made it again.
