I have been a Coeliac for 35 years and went to Japan two years ago. If you like sushi, you have no problem because you can buy it in most small supermarkets and large stores; the soy sauce, which you can't have, is in a separate sachet. Eating out is a problem, but I survived travelling round the country for 18 days on fruit, which isn't difficult to get hold of, sushi and jelly plus snickers.
Please learn some Japanese because the Japanese people will love you for trying their language and will be extremely helpful to you. Enjoy!!!
