I've had much better results when making GF bread by hand as opposed to using a bread machine. I know this isn't always feasible due to busy lives, etc. Frinstance, when I was away on holiday and obviously without the food processor, I put the whole pack of Juvela High Fibre Mix into a bowl, along with the yeast, a little salt and olive oil, then added just enough warm water to form a dough. I then kneeded the dough and made rolls. (Kneeding dough is very theraputic by the way, especially if you've had a bad day)! I then brushed them with beaten egg and sprinkled seeds on top. They really were much better than when I follow the recipe on the packet.
...I find if I freeze the rolls once they've cooled, they don't crumble, such as they would if I kept them in the fridge for a couple of days I set the oven at 200deg and cooked them for 15 mins. Of course, all ovens vary. The oven I used when I was on holiday didn't have a fan, which does make a difference.
