Many soups can be made quickly and easily:
Lentil (orange lentils + garlic + finely chopped onion [fried in a little oil until softened but not browned] + season to taste). All into a saucepan with water and simmer until lentils are soft. Can be liquidised before serving.
Lentil with Red Peppers - as above, but cook with finely chopped red peppers. Add a little butter just before serving.
Lentil with chilli - as per above and add some chopped chilli.
Carrot and coriander. Roughly chop the carrots and cook in water with a gf stock cube. Liquidise when carrots are soft and add chopped coriander leaves before serving.
Carrot with cumin - as above, but cook with some powdered cumin.
Carrot with garlic & ginger - as above, but add garlic & ginger.
Cauliflower - cook, season, blend. Add some cream to each serving.
Leek and potato - a really easy to make classic. Blend for vichysoise or leave 'lumpy' for a rougher textured soup.
Spinach and green lentil potage (potatoes, garlic, spinach and green lentils with a little olive oil).
Soup made with butternut squash.
Country vegetable soup with a mix of dried peas and beans
Minestrone (just about anything can go into a minestrone: cabbage, lettuce, carrots, peas, beans, onion, celery, tomato, potato)
