GF johnnycakes/griddlecakes!!!

Hi all just thought I'd share with you all that I've successfully made GF johnnycakes (i.e. griddlecakes) by adapting Nigella's recipe in her 'How to be a domestic goddess' book.
The recipe makes about 30 small ones - 4 of us ate about 5 each and I've frozen the rest.
They were particularly delicious with goats salted butter and bacon rashers, but my daughters had their with strawberry jam and seemed very happy to eat them....yum!
Ingredients: 150gr fine cornmeal 100g GF plain flour 4 tsp GF baking powder 1 tsp xantham gum 1/2 tsp salt 2 tsp caster sugar 300ml milk 2 large eggs 30g melted butter (I used Vitalite, as I'm diary-free too)
Beat together eggs and milk. Add all dry ingredients, and whisk together. Then mix in melted butter. Pre-heat oven to keep warm. Heat an oiled frying pan, and spoon small quantities to form 6cm diameter pancakes - they'll start bubbling on top after 2 mins or so: turn over, and cook for 2 more mins, then put on a plate in the oven to keep warm. Serve immediately.
