You can use butter instead of suet in Christmas pud, grate from fridge or melt gently -in bowl over pan of hot water -or microwave. You can also use veg cooking oil instead of suet in pud also.

Place a block of hard fat in the freezer. Leave it for a good few hours. When it is frozen solid, sprinkle some gluten free flour into a bowl and then using a fine grater, grate the fat into the mix giving it an occasional stir to distribute the fat within the flour. Use this in place of suet and you will have great results. The choice of fat is entirely yours but it has to be fat that is hard at room temperature. I use lard or dripping which is not healthy and certainly wouldn't please the vegetarians of the world but if you want the best tasting dumplings and jam roly poly then use this. Otherwise just use a hard vegtable fat. It works really well and is much easier than trying to find GF suet in the shops. Enjoy. Andrew
