Quick/easy gluten free food.

.....rice and veg doesn't take long to cook, you can put a casserole type dish in the oven....
The only gf wheat-free bread I've found that's edible without toasting ........ is DS sweet rolls...

As most of us find, it is the lunch time food that is the most difficult to accommodate with gluten free stuff. If I am organised enough, I make enough at supper the night before, to have enough left over for lunch. If not it is gluten free pasta (quicker than rice)or a microwave jacket potato.
However, I have been known to:
make up a portion of smash with stock cube/soup and eat that with whatever is to hand;
a small tin of potatoes, a tin of broad beans heated together, drained and mixed with tuna and mayonnaise;
and on desperate occasions a bowl of rice crispies with grated cheese zapped in the microwave!
...................cornflakes, frosties, rice crispies

You can get GF breakfast cereals without malt eg Doves Farm, Mesa Sunrise, Gorilla Munch, Orgran, Kallo etc.
I think bananas are the best way to fill up if you might miss a meal or are going to be late eating & you're getting snappy.

............have you thought of investing in a slow-cooker? They are great and we use ours all the time. You can stick the ingredients in the night before, turn it on in the morning and a hot meal is waiting for you in the evening and it doesn't overcook if you get home late!
............You can put a chicken in overnight and it's done in the morning ......... or you can just put in casserole ingredients with a sauce or a big pot of soup which would last several days.

A really quick lunch which we have when we have been out and come in hungry is Baxters Chicken Broth with Sharwoods rice noodles in it. I rehydrate the noodles before adding them to the soup but even so you still need to add a bit extra water to the soup as they still absorb more while heating through. Depending on how hungry we are we have extra bread, etc. with it.

Have you tried any of the g/f pastas? We just had the orgran pasta twists (three different colours) with a jar of Tescos original pasta sauce. Took about 10 mins to cook and even the kids liked it!! - might be worth a try.
DS also make a bread that can be eaten straight from the pack - I think its called Multigrain. Its fine with a moist filling for sandwiches and makes really nice toast.
Another quick lunch that we use when going out is a tin of bean salad in vinaigrette (tesco) mixed with a tin of tuna. Sounds foul I know, but when you are in a rush etc., its great. Bethan (6) took a large pot of this to school today for lunch and much to my surprise ate the lot! It is quite filling too which is obviously a bonus.

If cook a chilli, curry etc (vegetarian of course) at the weekedn I always cook tons adn then freeze for quick defrosting in the week. But you can buy quite a lot of microwavable/quick cook in oven indian meals that are GF and not bad. Also the Lloyd Grossman sauces are generalyl glutenm free adn just take 5 mins in the saucepan and are pretty good.
For snadwiches are make cheese and pickle rice cake sandwiches - use Branston sanwick pickle as the bits fit better in rice cakes. I also keep a stock of the Sainsbury's Free From 'rice bowls' in the cupbaord which are great if you run out of rice cakes/GF bread and need a quick lunch for work. Just add water!

1 tin of rice pudding (don't forget spoon and can opener)
1 bag of crisps(Walkers/Asda label theirs GF)
2 hard boiled eggs
1 Big lump of cheese
2 slices of ham (buy loads, it keeps well and you can do a bit every day).
1 chicken portion.
1 Cadburys Flake.
You can buy loads of all that and most of it keeps for nearly a week anyway so you only need do do 2 shops at most if you've got a list and don't forget anything.
Put that in a sandwich box and you'll be ok.
Asda do brilliant GF pakora and satays at the deli counter, i always get a couple of quids worth and they last two/three days too.
