GF/dairy free/egg free Gingerbread
Ingredients
8 ozs gf flour 1 teaspoon baking powder 2 ozs sugar 1 teaspoon mixed spice 1 teaspoon bicarbonate of soda 2 teaspoons ground ginger 4 ozs dairy free spread (Pure e.g.) Other if dairy not a problem. 4 ozs Black treacle 2 ozs Golden syrup 1/4 pt Rice milk or Other if dairy not a problem In place of one beaten egg use 1 heaped tablespoon of cornflour mixed with 3 tablespoons of water 1/2 teaspoon Xanthan gum if desired
Method
Mix together the flour, gum (if used), sugar, mixed spice, soda and ginger. Gently melt together the spread, treacle & syrup, then add to the dry ingredients. Warm the milk and beat into the mixture, followed by the egg substitution. Pour mix into a greased and lined cake tin (6" x 8"). Bake in a preheated oven 150C/300F/Gas mark 2 for approx 60 mins. Cool then cut.
