BAKED SWEET POTATOES (Nigel Slater) Allow one small sweet potato per person. Wash the potatoes and wipe them dry. Pierce each one once or twice with a skewer so they don't explode in the oven. Bake for 45 minutes or so on a baking tray till they are completely soft. They will keep warm without spoiling for 20 minutes in a switched-off oven.
