Dairy Free Egg Free Gluten Free & Vegan! This recipe is taken from the realfood.org.uk website and is going to be published in a booklet called Vegan cooking with Kids. Ingredients: 200g plain firm tofu 750ml Swedish Glace Vanilla Ice Cream* 250g G/F biscuits (digestives are best) big knob of margarine 1. Smash up the biscuits 2. Melt the marg, coat the crumbs in it. 3. Pack the crumbs into a flan type dish. 4. Whizz the ice cream and tofu in the blender, pour it into the flan dish. Bake for about 30 minutes at gasmark 5. It'll go golden & bubbly on top. Don't worry if it looks a little liquid when it comes out. Serve when cool as it is or cover with fruit then add some quick set jelly. * Swedish Glace Ice Cream is available from Tesco, Sainsburys, Holland & Barrat & most health food shops.
