I lived in Sri Lanka for 2 years. At the time i didn't know i was coeliac but i have been back for visits since i have been.
basically why bother with rolls etc at all. the staple diet of sri lankans is rice and curry and they are highly unlikely to use flour in them. Wheat flour is imported and is therefore not the cheapest commodity. Bread is subsidised but is not that great there anyway!
If you are out and about you should be able to buy plenty of fresh fruit to keep you going. I would take a few snack bars for when you want something different. You can also get yoghurt even in small places. Also curd and jaggery will be fine for desserts. You can get tomato soup most places and although you might want to double check most places wont thicken with wheat flour. Also chips will be hand cut and shoudl be fine.
You will not in a million years get anyone to understand about contamination etc - srilankans have much worse things than coeliac disease to worry about it and i'm pretty sure 99.9999% of the population wont have heard of it. If you tell me where you are going etc I might be able to suggest particualr places to stay/eat/visit etc - although I must admit to being an independednt traveller and avoid big hotels etc.
By the way if someone shakes there head at you they mean yes so dont get the wrong end of the stick if you ask if something has flour in and they shake their head!
