Ok here we are:
Spiced sultana bread recipe (makes a small loaf)
225 g (8oz) Doves' Farm GF bread flour
1 tsp fast action dried yeast
1 tsp mixed spice (or cinnamon)
3/4 tsp white wine vinegar (I think you could use lemon juice instead, although haven't tried this)
2 tbsp clear honey
Grated zest of half a lemon (or orange if you like)
2 small handfuls sultanas (I didn't weigh out)
1 egg
2 tbsp vegetable oil or melted butter
200ml milk
If you're doing this in the breadmaker, beat the egg, milk, vinegar, oil or butter, zest and honey together and place in the pan. Put the flour and mixed spice on top, make a little hollow and sprinkle in the yeast. With my breadmaker I drop in the sultanas towards the end of the mixing cycle. My breadmaker has a gluten free programme (2 hours), use whichever programme you think appropriate on yours.
If you're doing things the old fashioned way, grease (and maybe line) a small (1lb size) loaf tin. Mix the flour, yeast and mixed spice together in the bowl and make a well in the centre. Beat together the egg, milk, vinegar, oil or butter, zest and honey and pour onto the dry ingredients. Mix well and stir in the sultanas. Pour into the loaf tin and leave to rise in a warm place for an hour. Bake for around 30 mins before checking for doneness and give a little longer if necessary....Lyn G
