Thai chicken soup
A bit of a cheat in a way as it's naturally gf. It's also very easy and very tasty. The quantities would serve two as a main meal (with rice on the side) or four as a starter.
1 12oz can coconut milk 1/4 lb chicken breast, cut into bite-sized pieces juice and zest of 1 lime 1 4" piece of lemon grass, cut into v. thin slices on diagonal (I couldn't get fresh lemon grass, so I used 1 teasp of Bart Spices lemon grass puree stuff - the dried stuff is a waste of time.) 3 or 4 slices of galangal (or root ginger) Hot chilli peppers - the number depends on how hot you like your food - I don't like too much heat, and used 2 - I also like to cut the pieces fairly big so that they are easy to fish out.
Marinate the chicken in the lime juice. Heat the coconut milk, lemon grass, lime zest and galangal/ginger. (You can add the chillies now, or leave them until later if you want to reduce the heat.) Heat until just boiling. Add the chicken and reduce the heat to simmer for about 12 - 15 min - until the chicken is cooked.
