From Barbara on GF board
The year after I was diagnosed I went to Dominican Republic and had a wonderful time. This was four years ago.
In spite of stating that I was in need of a gluten free diet for medical reasons when booking the holiday, the hotel had not been informed of my need and the company representative was no help. I was booked in a full inclusive resort, but the thing that made it work so well, was I asked one of the reception staff who was fluent in English to translate for me, while I spoke to the chef and the head waiter. They could not have been more helpful.
The fresh fruit was fabulous and they cooked most of my food separately. The headwaiter always held back a desert for me (the crème caramel was my favourite, made in the kitchen so the chef knew it was gluten free. The ice creams were delicious too.)
The only problem was on the day trips the Company rep again failed to get the gluten free lunches sorted out.
The people in the Dominican Republic were proud of their Country and willing to help.

I always take breakfast cereal, bread, crackers and OK bars - it leaves lots of room for things you have bought on the way home! I also carry a letter from my GP and a copy of my prescription.
which means I have an illness called Coeliac Disease. It is necessary for me to have a very strict diet that is gluten free. I will become seriously ill if I eat anything that contains gluten or has been cooked in the same place or oil as Wheatflour, Barley, Rye, Malt or Oats. I can eat Cornflour, Rice, Potato all fresh vegetables and fruit, cheese, eggs, milk, fresh meat and fish as long as they have not been prepared using wheatflour, breadcrumbs, batter or sauce.
