Sweet and Sour chicken

Sweet and Sour chicken, adapted from an ancient 2nd hand recipe book called '1001 favourite family recipes':
In large frying pan: melt a large knob of butter, fry bite size pieces of chicken briskly till lightly brown.
In a bowl or jug: get the juice from small tin of pineapples and make up to 7 oz with water (keep the pinapple chunks!).
Stir into the juice: 1 tblspn brown sugar, 2tblspn tamari (i.e. gf soy sauce), 1 tblspn vinegar (spirit), a chopped green pepper.
Add this mixture to the frying pan and simmer, covered with lid or tin foil, for 15 mins until the chicken is cooked.
Then add to the pan: 1tblspn cornflour blended with a little water, cook for a couple of mins, stirring to prevent sticking.
Stir in the pineapple chunks and some chopped mushrooms and cook until warmed through.
Serve with boiled rice.
