To make a risotto, I usually use chopped bacon or pancetta (Bacon is easier) or even chorizo (Tesco do a Gf one),an onion, maybe a pepper or small tin of sweetcorn. Cook in a pan until onion is transparent. Then add arborio rice (again from tesco). Stir in and wait until that is transparent too and then add some stock. I usually just shove in a crumbled stock cube and enough water to cover it.Keep stirring until stock cube dissolved. Add some garlic. Then allow to cook through adding more water as necessary. It is really easy and tasty. Another alternative I like is chicken/yellow pepper and sweetocrn. ..... For a special treat, I put some cheese in. ....I sometimes put cheddar/mozzrella in or parmasan on top.
