Mediterranean Tomato & olive tarts

just thought i would share this recipe with you, the pastry is lovely and you can top it with what ever you like.
180g plain flour (doves) 80g polenta 105g marg or butter 1 egg
Rub fat into flours and bind with egg, cut into 6 pieces and flaten each piece into an oval with your hand and place onto a greased baking sheet, cover the base of each one with tomato puree or red pesto( i did some homemade pesto)slices of tomatoe, some olives cut in half and then i put a slice of mozzerela on each, some black pepper and a drizzle of olive oil, bake for 15-20 mins, gas 5 /190c/375f, they are really lovely, Bill has been taking them to work in his lunch box also nice served with a salad, the toppings can be your own choice with anything you have in the fridge, eg: ham, onions, any sort of cheese etc.
