I made this for visitors on Sunday and it was delicious. (Also did the famous Yorkshire puds!)
Carrot, sweet potato and dill soup
1 oz butter 1 large onion, chopped 1 large sweet potato, chopped 3 large carrots, chopped 1 ¾ pt veg. or chicken stock tbsp chopped dill 6 oz sour cream
Melt butter and fry chopped veg for 5 mins Add dill Stir in stock and bring to the boil Reduce heat and simmer for 30 mins Cool slightly Blend in batches until smooth Add sour cream DO NOT BOIL
