...Here is a recipe for Spagetti Carbonara, I started making this towards the race day, it is great, full of protein and fat, perfect for strenuous training. The original recipe stated; Serves 5-6, this is equivalent to about two marathon training meals
Ingredients
* 500g pack of GF spaghetti (sainsbury's is my favorite) * salt and freshly ground pepper * 200g finely grated parmesan * 3 beaten free-range eggs * 3 garlic cloves, finely chopped * handful of parsley, finely chopped * 400ml double cream * 40g Prosciutto, cut into small, thin strips
How to do it -
1. Put the pasta on to cook as normal (with salt and a little oil)
2. While it cooks, grate and put the parmesan (it looks like a lot), egg yolks, garlic and cream into a very large bowl. Season and whisk together. It should look light and thick - if not add more parmesan.
3. Fry the thin strips of ham in a pan till it is nice and crispy
4. As soon as the pasta is cooked, drain it, then tip it into the bowl, add the parsley and quickly toss everything together using two forks. The egg will be cooked by the heat of the pasta, and the creamy sauce will cling to the strands. Put all this back into the (rapidly rinsed) pasta pan and cook for about 1 min.
5. Serve and garnish with the crisp Prosciutto on top!
Serve straight away. Should have taken you just over 20 mins.
